Shepherd's Pie Again

Who would think there were so many ways to make a humble Shepherd's Pie.

Well after watching Jamie Oliver's Comfort Meals last week we found yet another way to make a great Shepherd's Pie.

This dish was made with the remains of Sunday's slow cooked lamb leg meat, roughly chopped and simmered in onion and leek gravy. The mash was a mixture of potato, parsnip and turnip boiled in slightly salted water and then mashed together with a good knob of butter. The whole lot topped with a handful of grated reduced fat mature cheddar.

Bung it in the oven for a half hour and there you have it, perfect comfort food.

Last night I served this up with Yorkshire Pudding, roast parsnip, roast carrot, broccoli and cabbage.

This is a quick and easy mid week meal making the most of left overs from the weekend but boy was it tasty. Left overs needn't be boring or tasteless. Make the most of them.

  1. Oh it was. The lamb was melt in the mouth.

    Its gone a surprisingly long way as well. One leg of lamb has made four Sunday dinners, two large portions of Shepherd's Pie and I have a portion of left overs from the Shepherd's Pie in the freezer for a quick and easy meal one lunchtime.

    Not bad for a £8 leg of lamb!
