A Taste of the Caribbean


Last night it was a taste of the Caribbean for dinner in our house with low cooked dice pork shoulder in a tomato sauce with Caribbean herbs and spices, onions, mushrooms, peppers and courgette served with wholegrain basmati rice, vegetables and Jonny Cakes.

I cheated slightly and made the pork over night on Monday night so that it just needed warming through to serve last night. 

Jonny Cakes, for those not in the know are a simple flat bread made with cornmeal. Simply make a batter with cornmeal, milk, water if needed and season with salt and pepper and then fry in a little butter, like you would a pancake almost.

This was really very tasty and filling for a cold March evening after work. Definitely one we will make again soon.
