Bacon and Leek Pie

This was very quick and easy to make. Simply fry some chopped bacon and when browning nice add some chopped leeks and a knob of butter. When the leeks are soft add a dollop of low fat soft cheese and a glug of milk. 

Portion into pie dishes and top with fresh mashed potato and grated reduced fat mature cheddar. 

Bake for 30 minutes and serve. 

Simple yet very tasty.
