This recipe really couldnt be any easier to make. It takes litterally minutes to knock up and about 25 minutes to bake in the oven, buit the results are simply amazing. A perfect light evening meal or simply served as part of a summer buffet or party.
So for this quiche you will need: 1 pack of short crust pastry, 2 fillets of salmon flaked, a handful of broccoli florets, 3 eggs, 200 ml low fat crème fraiche and 200g Philadelphia Light with Chives
So to begin preheat the oven to 180C. Then add the broccoli florets to a pan of boiling water and cook for a couple of minutes. Remove and strain the brocolli before it is completely cooked through.
Whilst the broccoli is cooking add to a bowl, the eggs, crème fraiche, Philly and salmon and mix together. The Philly will remain lumpy but that is ok. Roll out your pastry and use it to line a suitably sized tin. Arrange the broccoli evenly on the bottom of the pastry, then pour over the salmon and cheese mix. Place in the oven and bake for 25 minutes or until golden on top and cooked right through.
So simple, yet so tasty. Great picnic or party food but equally as good served with salad and chips for a light summery main meal. Enjoy...
